Add the meat and cover it all with the wine. > Let stand for two hours minimum. Remove the meat without the liquid and sauté it in a large pan with the olive oil and butter. Add the mixture with which it was marinated and simmer for 1 ½ hours. If it dries, add the beef broth. When the meat is tender, chop it into slices. Pass the liquid that was left in the pan through the sieve. Cover the slices of meat with the remaining juice and cook for ½ hour more on very low heat. If it dries, add a little more wine.
