foods | Pearl barley with mushroomsPortions 8 servings Preparation Time 25 minutes Cooking Time 20 minutesIngredients 2 cups pearl barley 8 cups water 1 cup fresh mushrooms 3 tablespoons oil 1 tablespoon butter 1 branch white onions 2 cloves finely chopped garlic 1 tablespoon chopped coriander 1 tablespoon chopped parsley 1 tablespoon soy sauce Salt and pepper to taste Preparation In a large pot boil 8 cups of salted water. Add 2 cups of pearl barley soaked from the night before. Cook uncovered for 8 to 10 minutes until the barley is tender. . Once the barley is cooked, drain it immediately to drain the water in its entirety. Place the barley again in the pot, adding a spoonful of butter, salt and pepper to taste. Mix well and leave stand for a few minutes. Spread the oil in a large hot pan, fry the chopped white onion and garlic. Add the chopped mushrooms, until golden brown. Season with soy sauce. Br> Combine this rehash of mushrooms with the pearl barley and mix well. Serve hot in a dish and garnish with the finely chopped parsley and cilantro.
