4 cups of chicken bouillon
2 cups of cooked rice
1 cup of pre-cooked chocitos
3 tablespoons of chopped red pepper
3 tablespoons of chopped green pepper
1/2 cup chopped chives
1 tablespoon chopped parsley
1 teaspoon dried tarragon
1 teaspoon cornstarch
2 tablespoons water
3 tablespoons grated ripe cheese


In a large pot, put the consommé, the rice, the corn, the red and green peppers, the scallion and the tarragon; Stir well. Cook over medium heat until the mixture boils; then lower the heat and let cook for 5 minutes.
In a small bowl, dissolve the cornstarch in the water and add to the soup. Cook for 5 minutes or until the soup thickens a little; stir from time to time.
Serve hot sprinkled cheese and parsley.
