In another bowl whisk the egg whites until they are about to snow. With a spatula mix in an enveloping way. mascarpone cheese with beaten egg whites until it has a homogeneous mixture. Add the egg yolk mixture to the cheese mixture, and mix gently. Dip the bizcotelas in the coffee, one by one, without leaving they come out too wet. Place the soaked bizcotelas in a mold to form a complete layer. Cover the first layer of bizcotelas with a layer of mascarpone cream. Put another layer of soaked bizcotelas in coffee Repeat the process until you finish with a final layer of mascarpone. Refrigerate the tiramisu for at least two hours.
